Heat Exchanger

The heat exchanger captures the excess heat that results from sap boiling and warms the incoming cold sap. The heat exchanger uses the hot water and hot sap produced during sap processing to preheat cold sap. This differs from other preheating processes that use the hot steam produced during sap processing. The heat exchanger is used with the vacuum evaporator and the vapor compression evaporator.
