The
production of maple syrup, maple sugar, maple cream, and other maple
products is an important and exciting part of the history of rural
forest land throughout New York, much of the eastern United States,
and Canada. Maple products provide annual income for maple producers
and historically were important for personal consumption.
Maple syrup production
has a long and interesting history from colonial times into the early
decades of this century. More recently, modern technologies are transforming
the way maple sap is produced, collected, processed, and marketed.
